Ice Cream Birthday Cake

Ingredients:

• Between 2 and 6 pint bricks of Corrin Hill ice cream (depending on the number of people)
• Chocolate Sauce (optional)
• Coloured icing for writing

Any combination of:

• Sweets - Smarties, Chocolate Buttons, Maltesers
• Fruits - slices of strawberry, apples, banana, mandarin segments or raspberries

Method:

Remove the packaging from the ice cream and place the pint bricks onto a plate or tray that can fit into the freezer.

Smooth over the joints between the bricks with a warmed palate knife

Decorate using fruit, smarties, chocolate buttons, chocolate fingers, etc.

Write 'Happy Birthday' using coloured icing or with smarties or chocolate buttons

Cover the top with chocolate sauce and decorate with fruit or sweets.
