Corrin Hill Deep Fried Ice Cream

Ingredients:

(This recipe should not be attempted with a soft scoop ice cream)

• Corrin Hill Vanilla Ice Cream
• Desiccated Coconut
• Fish Batter Mix (available from supermarkets)
• Cinnamon
• Sugar

Method:

Scoop some Corrin Hill vanilla ice cream into golf ball sized pieces.

Roll in desiccated coconut.

Place on a tray covered with grease proof paper and return to freezer.

Prepare a fish batter mix. Ideally you can buy a fish batter mix from your local supermarket. Ensure the batter mix is not too thin as a good coating is required over the ice cream.

Heat the oil. Cover the golf ball sized pieces of ice cream in fish batter mix.

Take care to cover the ice cream well in the batter. Deep fry in hot oil for a few seconds until golden brown.

Roll in cinnamon sugar and place in a coulis of raspberries and sprinkle with chocolate. If you prefer serve with maple syrup instead.
